Here are a few quick recipes if you know you have a full evening of activities and need to get the kids to bed on time. Enjoy!

Homemade Mac n Cheese

Melt about 3 tablespoons of butter in a saucepan, and whisk in about 1/3 cup flour. Once it’s combined, add about a cup of milk and whisk continuously until the mixture thickens. Turn down the heat. Add a squirt of mustard and a sprinkle of paprika.

Grate in your favorite cheese (can use cheddar, mozza, gouda, sliced cheese, etc). Salt as desired.

Pour over your favorite cooked small pasta (macaroni or shells).  Add a can of tuna and/or peas if you want!

If you have extra time, put the above mixture in a casserole dish, grate some cheese on top and generously sprinkle over some bread crumbs. Drizzle some melted butter over and place under the broiler for a few minutes (watch carefully).




Not really a recipe, but tacos are always a staple for a quick, easy meal in our house.  Quick and easy to make the meat (chicken or beef) ahead of time. Also easy to have all of the veggies chopped up in the fridge ahead of time.  It is also good for young toddlers because everything can be broken down into bite sized pieces!
